
Oatbran Yogurt Muffins

Why not try to bake the perfect Oatbran Yogurt Muffin!
Ingredients:
- 6oz (150g) plain flour
- 2tsp (10ml) baking powder
- 2oz (50g) Prewett’s Oatbran
- 3oz (75g) sugar
- pinch salt – optional
- 5fl oz(125ml) natural yogurt
- 75ml (75ml) vegetable oil
- 1 egg
Flavourings:
3oz (75g) dried fruit eg. sultanas; raisins dates or fresh berries or 1 large apple peeled, cored & chopped + ½ tsp (2.5ml) cinnamon or 2oz (50g) chocolate chips
Method:
Prepare 6 hole muffin tin with paper cases. Preheat oven to 220°C (425 °F) Gas Mk 7. Sift flour and baking powder into a bowl. Stir in Prewett’s Oatbran, sugar and salt. Measure yogurt and oil into a jug, add egg and blend together. Pour the liquid into dry ingredients, add chosen flavouring. Stir lightly to an even mixture and spoon into muffin cases. Bake for 15-20 mins until risen and brown. Serve warm and with butter if liked.
